Most people do not understand that the knife used for bread has the right style of blade for the consistency of the angel food cake. :) :) My mother taught me this when I was little... this is my favorite cake... and as a treat she always made me a little cake on the side { actually it was that the mix would over flow her pan so she kept back that little amount to make her cake come out in the proper proportion for her pan so it looked right. :) }

My grandmother shared that tip with me yesterday in fact as she was cutting her Angel Food Cake. It proved quite effective :)
