Lemon Daisy Tarts

Lemon Daisy Tarts are almost too cute to eat… almost.


  1. Mix eggs and butter with cake mix until dough is formed.
  2. Dust rolling surface and rolling pin with flour to prevent sticking.
  3. Roll out dough and use a cookie cutter to cut shapes (we used a flower shape).
  4. Press each shape gently into a greased cupcake pan.
  5. Spoon a teaspoon of lemon filling into the centre of each pie crust.
  6. Bake at 350 degrees for 20-25 minutes or until golden brown.
  7. TIP: Use cupcake liners for no-fail removal from the cupcake pan.

I wonder how this would work with other fruit pie style fillings such as blueberry or using actual fresh berries with a touch of icing sugar mixed or dusted on? Looks really interesting and some thing I would not have thought of doing
