Cake Mix Pancakes

These Cake Mix Pancakes are a great excuse to break out your cookie cutters and make the family a delicious decorative breakfast. Use your favorite flavour cake mix–we used Duncan Hines French Vanilla.

Directions

  1. In a large bowl, combine the flour, baking powder, salt and cake mix. Set aside. In another small bowl, mix together the oil, eggs and milk.
  2. Add the wet ingredients into the dry ingredients and mix just until combined. Batter will be thick. (If you'd like thinner pancakes, you can add a bit more milk.)
  3. Heat a griddle to about 275 degrees. Spray the griddle and cookie cutters with cooking spray. Place the cookie cutters on pan and ladle a thin layer of pancake batter into the molds. Cook the pancakes for about 2 minutes on each side.
  4. Tip: These pancakes freeze well. Place wax paper between each pancake and put them in a plastic bag. The wax paper will help them to separate easily.
