Banana Bread with Coconut


  1. Preheat oven 350 degrees. Grease a 9 x 5-inch loaf pan.
  2. In a bowl, whisk together the flour, salt, and baking powder.
  3. In another bowl, mix the melted butter and sugar. Add eggs, bananas and vanilla. Add flour to the bowl and mix. Stir in the coconut and nuts).
  4. Bake for 50-55 minutes. Let loaf cool in the pan for ten minutes, then turn out onto rack.
