These muffins are very light and fluffy. Melt in your mouth type muffin. Great for breakfast and healthy too.
- Preheat oven to 350 degrees farenheit. Grease and flour 2 muffin pans.
- Take 1 Tbsp of unprepared cake mix and place in separate bowl. Add you raisins and mix gently with a spoon to coat. This prevents the raisins from sinking to the bottom of your cupcakes while baking.
- Mix together your first 5 ingredients for about 5 minutes with mixer Gently fold in the zuchinni and raisins and fold until completely mixed in.
- Add batter to prepared muffin pans bake 18 mins or center springs back.
