Zuchinni Apple Raisin Breakfast Muffins

These muffins are very light and fluffy. Melt in your mouth type muffin. Great for breakfast and healthy too.

Directions

  1. Preheat oven to 350 degrees farenheit. Grease and flour 2 muffin pans.
  2. Take 1 Tbsp of unprepared cake mix and place in separate bowl. Add you raisins and mix gently with a spoon to coat. This prevents the raisins from sinking to the bottom of your cupcakes while baking.
  3. Mix together your first 5 ingredients for about 5 minutes with mixer Gently fold in the zuchinni and raisins and fold until completely mixed in.
  4. Add batter to prepared muffin pans bake 18 mins or center springs back.
