Lemon Loaf with Fresh Fruit

This lemon loaf is packed with lots of lemon flavor. Perfect in the summer with fresh berries or after school with a glass of milk.


  1. Preheat oven to 375 F
  2. Prepare cake mix to package instruction. Add lemon rind to dry package.
  3. Pour into lightly greased loaf pans.
  4. Bake on middle rack of oven for 1 hour.
  5. Let cake sit in pan for 3 minutes.
  6. Stir lemon juice and sugar together in a small bowl until dissolved.
  7. Pour over warm cake.
  8. Makes up to 3 loaves.
