This lemon loaf is packed with lots of lemon flavor. Perfect in the summer with fresh berries or after school with a glass of milk.
- Preheat oven to 375 F
- Prepare cake mix to package instruction. Add lemon rind to dry package.
- Pour into lightly greased loaf pans.
- Bake on middle rack of oven for 1 hour.
- Let cake sit in pan for 3 minutes.
- Stir lemon juice and sugar together in a small bowl until dissolved.
- Pour over warm cake.
- Makes up to 3 loaves.
