Easter Egg Nests cupcakes

Ingredients

  • I box Duncan Hines White Cake mix, prepared according to package directions for cupcakes
  • 1-2 cans Duncan Hines Whipped Vanilla Frosting
  • 4 cups colored sweetened coconut (I bought mine already colored in appropriate Easter colors at my local Bulk Barn but you can make your own by putting coconut in a container with a tight fitting lid and adding a few drops of food coloring in a color of your choice. Shake well.)
  • Cadbury Mini Eggs

Directions

  1. Prepare the while cake mix according to package directions for cupcakes, bake and cool.
  2. Using a piping bag with a large tip, frost cupcakes in a circular motion.
  3. Take the colored coconut and lightly press into the frosting along the top edge of the cupcake to form the "nest".
  4. Place 3 Cadbury Mini Eggs in the centre of each "nest".
