For our Summer BBQ party, I thought of making something cheerful and colourful! Hence, the Rainbow in My Mouth Cupcakes!
As per package instructions:
- Prep: PREHEAT oven to 350°F or 325°F for dark or coated pans*. Grease muffin tins. Use cupcake liners.
- Mix: BLEND dry mix, water, oil and egg whites in large bowl at low speed until moistened (about 30 seconds). BEAT at medium speed for 2 minutes. SEPARATE batter into FOUR bowls and MIX food colouring in each bowl. SPOON 1 or 2 Tablespoons per colour into each cupcake liner.
- Bake: BAKE following chart below. *Add 3-5 minutes to bake time for dark or coated pans. Cupcake is done when toothpick inserted in center comes out clean. COOL in pan on wire rack for 15 minutes. Cool completely before frosting.
- *Immediately add the sprinkles after you frost if you want it to stick.
