Blueberry cupcakes


  1. Preheat oven to 350 degrees
  2. Place first 5 ingredients in a mixing bowl and beat 2 minutes vigorously beat by hand until smooth and creamy-about 2 min
  3. Gently fold in blueberries until well dispersed
  4. Fill muffin cups 3/4 full and pace in tin
  5. Bake 17-20 minutes
  6. Let cool and enjoy
