Jingle Bell Cupcakes

Enjoy this fun holiday project from "Hello, Cupcake!" Fruit, vanilla frosting and Cheerios help ring in the wintry weather with these fun treats. Be sure to take a sleigh ride with one of these sweets in tow.

Directions

  1. Cut the fruit leather lengthwise into ⅛" wide strips. Tint the vanilla frosting pale yellow with the yellow food colouring. Spoon 2 Tbsp. yellow frosting into a small freezer bag. Spoon the chocolate frosting into a small freezer bag. Press out the excess air and seal the bags.
  2. Place the yellow sugar into a small shallow bowl. Frost the tops of 4 cupcakes with a mound of the yellow frosting and make smooth. Roll the tops of the frosted cupcakes into the yellow sugar to cover completely. Repeat with the remaining frosting and sugar.
  3. Snip a very small corner from the bags with the yellow and chocolate frosting. Pipe an “X” shape near one edge of the sugared cupcakes. Insert the mini chocolate chips, pointed end down, at the end of each chocolate line. Pipe a dot of the yellow frosting along the opposite edge and attach the cereal “O”’s as the holder. Arrange the cupcakes on a serving platter with the tops all facing in the same direction. Carefully insert strips, cutting at different lengths, of the fruit leather into the openings as the string that connects the bells.
