Dark Chocolate Espresso Cake

Buttermilk dark chocolate fudge cake mix flavored with espresso, frosted with a cocoa espresso cream-cheese frosting.


  1. Preheat oven to 350°F.
  2. Grease 2, 9" cake pans with veg shortening and line with parchment paper. Coat shortening with cocoa powder.
  3. Whisk together Cake Mix, espresso powder and salt.
  4. Whisk eggs, stir in buttermilk, vanilla and vegetable oil.
  5. Using a hand mixer incorporate wet ingredients to dry ingredients, until well blended.
  6. Add boiling water. Batter will be thin.
  7. Pour batter into prepared pans.
  8. Bake cake for 35-40 minutes.
  1. Whip together Cream Cheese Frosting and dry ingredients.
