Boston Cream Cake

This Boston Cream Cake is made with a yellow cake mix, filled with vanilla pudding and coated with a chocolate ganache. Perfect for Valentine's Day dessert!

Ingredients

  • 1 box Duncan Hines yellow cake mix +
  • 1 1/3 cup water
  • 1/3 cup oil
  • 3 large eggs
  • FOR FILLING
  • 1 - 113g box of instant vanilla pudding +
  • 2 cups cold milk
  • FOR CHOCOLATE GANACHE
  • 8 oz semi-sweet chocolate,chopped
  • 1 cup heavy cream
  • Chop chocolate, put in a large glass/microwavable bowl. Heat cream on medium high until it comes to a boil. Remove from heat; pour cream over chocolate, let sit until chocolate is melted (5 minutes).
  • Stir. Cool for a few minutes.
  • 2 - 8" round pans

Directions

  1. Preheat oven to 350F, or 325F. Spray 2-8" round pans. Prepare cake batter and bake as directed.
  2. Cool cakes completely.
  3. Make vanilla pudding instructed on box.
  4. Place one cake on wire rack with a cookie sheet under, fill with pudding, top with second cake.
  5. Prepare chocolate ganache as mentioned.
  6. Pour ganache over cake. Let cake dry.
