Triple Hit Lemon Loaves

  1. Heat oven to 350 F
  2. Spray 2 (8x4 inch) loaf pans with cooking spray.
  3. Add boiling water to jelly powder: stir 2 min. until completely dissolved.
  4. Mix cake mix, oil, zest of lemon, jelly and eggs in large bowl with mixer until blended.
  5. Pour into prepared pans.
  6. Bake 40 min or until toothpick inserted in centres comes out clean.
  7. Pierce loaves with large fork at 1/2 inch intervals.
  8. Mix icing sugar and juice until blended; carefully pour over loaves.
  9. Cool loaves in pans 30 min; remove from pans to wire racks.
  10. Cool completely.
  1. Freeze Second Loaf for later.
  2. Wrap loaf in plastic wrap and foil.
  3. Freeze up to 1 month.
  4. When ready to serve, let stand at room temperature until thawed.

I have made this a few times and each time people said they could not stop eating it! It was so good. Simple to make and delicious.

this was the best & easiest lemon loaf wasn't long until there were just crumbs left! lovin' these recipes from mixes!

made this and this is the best , i usually make home made but got a box mix and this was so good think i will have this as a keeper.
