Triple Hit Lemon Loaves

MAKES 2 LOAVES

Ingredients Baking Instructions
  • 1 cup boiling water
  • 1 pkg (85g) Jell-o Lemon Jelly Powder
  • 1 pkg. (2 layer size) Lemon Cake Mix
  • 3/4 cup oil
  • 1/4 cup lemon zest
  • 4 eggs
  • 1 cup icing sugar
  • 1/4 cup lemon juice
  1. Heat oven to 350 F
  2. Spray 2 (8x4 inch) loaf pans with cooking spray.
  3. Add boiling water to jelly powder: stir 2 min. until completely dissolved.
  4. Mix cake mix, oil, zest of lemon, jelly and eggs in large bowl with mixer until blended.
  5. Pour into prepared pans.
  6. Bake 40 min or until toothpick inserted in centres comes out clean.
  7. Pierce loaves with large fork at 1/2 inch intervals.
  8. Mix icing sugar and juice until blended; carefully pour over loaves.
  9. Cool loaves in pans 30 min; remove from pans to wire racks.
  10. Cool completely.
  11. Tips:

  12. Freeze Second Loaf for later.
  13. Wrap loaf in plastic wrap and foil.
  14. Freeze up to 1 month.
  15. When ready to serve, let stand at room temperature until thawed.

made this and this is the best , i usually make home made but got a box mix and this was so good think i will have this as a keeper.
