Red Velvet Sandwich Cookies

Recipe Description
A delicious new way of serving Red Velvet cake -- as a fun sandwich cookie. Tastes great and makes for a playful addition to any dessert tray.

Ingredients Baking Instructions
  1. Melt butter; set aside to cool. Place cake mix, egg, cooled butter and vanilla in large mixing bowl. Mix by hand until well blended and dough is formed.
  2. Form dough into a smooth 12-inch log on wax paper or parchment making sure it is even in thickness end to end. Wrap in wax paper; seal in plastic wrap. Refrigerate 1 hour or overnight.
  3. Preheat oven to 350°F. Lightly grease baking sheets. Unwrap dough log and set on wax paper. Using a sharp knife, cut into 48 slices about 1/4- inch thick. Place on cool baking sheets about 2 inches apart.
  4. Bake, 1 sheet at a time, in center of oven for 10 to 12 minutes or until set. Cool 1 minute. Transfer to wire rack to cool completely.
  5. Spread frosting on half the cookies. Top each frosted cookie with another cookie. Gently press together.

Just finished. 2 eggs, 1/2 oil instead of butter. Formed log (dough was solid but oozie). Wrapped in parchment and plastic wrap, chilled only 10 min. Cut, half, halves again until 16, then each section in 3 = 48 cookies. Formed into balls and baked on parchment lined sheet, 10 min, 1 min on sheet cooling, wire rack. They were soft and delightful.

The dough was stiff and hard to mix. Then it crumbled when I sliced it. The cookies did not rise. They were flat and a little hard. Any suggestions?

I literally just made this...its baking as i type. I modified the recipe a bit, i added 2 eggs instead of one after reading your comment so it binded perfectly and i am short on time so i just rolled them into little balls (bottle cap size) and baked them right away. The are looking perfect in the oven right now and i cant wait to cool them, ice them and most importantly eat them lol.
