I am sure many of you know this one but I am often surprised how many even very experienced bakers don't know this trick. Use a high-quality ice cream scoop (the one with the metal band that rotates within the scoop) to quickly, neatly and easily fill your muffin cups. Also has the advantage that you can more easily insure you are getting roughly the same amount of batter in each cup. Happy baking!
